Something Magical is Baking in Danville, Vermont
Welcome to Zymemancy Bread Co.! We take simple, wholesome ingredients—flour, water, salt, and wild yeast—and let time do the heavy lifting. We believe that life is far too short for bland, mass-produced grocery store "bread." Real bread makes people happy, and we are here to bring that happiness straight to your kitchen table.
Our full website and online ordering system are currently fermenting behind the scenes, but the ovens are hot, and the bread is rising!
Meet the Baker
Zymemancy is owned and operated by Brett Parker. Originally from Virginia, Brett's wife introduced him to Danville, and it took just one visit for him to realize this community was the perfect place to raise a family. When he isn't baking, you can usually find him enjoying the local trails or grabbing a bite at Three Ponds.
What started as a hobby baking just two loaves at a time at home quickly turned into an obsession with the craft. To understand how to bring exceptional artisan bread to a larger scale, Brett immersed himself in the bread program at Three Ponds. Now, he’s scaling up that joy for the entire Danville area, putting love, care, and nutrition into every single bake.
Fresh From the Oven
We specialize in small-batch, naturally leavened sourdough goods that offer the perfect balance of flavor, texture, and crunch. Our core lineup includes:
-
Signature Sourdough Loaves: Long-fermented with a shatteringly crisp crust and a beautifully chewy, open interior.
-
Sourdough Bagels: Traditionally boiled and baked to perfection for an authentic, satisfying bite to fuel your mornings.
-
Sourdough Brioche Buns: Rich, buttery, and pillowy-soft—specially crafted to completely elevate your weekend cookouts and burgers.
Where You Can Find Zymemancy's Fresh Baked Goods
The markets are coming to an end, but fear not! Starting on October 21st, we will be open every Wednesday at our new location:
12 VT 15, West Danville
From 3:30pm to 7pm.
We'll be slinging the same goodies you have come to know and love at the markets.
As we make this transition, we are excited to begin offering online ordering. We encourage you to get those orders in ahead of time so you can avoid that "we ran out" disappointment! Orders will open on Thursday and close Sunday morning at 10am. After you place your first order, an email will be sent each week announcing when the online store is open as a friendly reminder to get those orders in. Pick up reminders will be sent on Tuesdays.
